Green Beans & Vegetables Stir Fry

This is a straightforward and quick recipe, and it applies to most vegetables. Remember that most vegetables cook differently; therefore, pay attention to how the colors are changing. It will help you determine how cooked they are. 

Before cooking, make sure to watch everything thoroughly and that whatever you are using comes from a known source. Local bought vegetables are my favorite. For the most part, I tried to eat following the seasons. It is the best way to know when something you are buying has its valuable nutrients. 

For this mouthwatering recipe, you are going to need: 

1 lb. green beans (or the vegetable of your choosing), trimmed and halved

1 cup of mushrooms 

Ten cloves garlic quartered

1”-piece ginger, minced

1/2 tsp. freshly ground black pepper 

1/2 tsp. freshly ground white pepper

1 tsp. rice wine vinegar

1 1/2 tbsp. hoisin sauce

1 tbsp. oyster sauce ( or the vegetarian version)

Two green onions, sliced

2 tsp. toasted sesame oil

Sesame seeds for garnish.   

Instructions 

  • In a large skillet over medium heat, heat two tablespoons of coconut oil (you can also use olive oil, avocado oil, butter, or ghee). 
  • Add in green beans, garlic, ginger, and frequently stir until beans begin to blister, 6 to 8 minutes. Next, stir in black and white pepper.
  • Stir in vinegar, hoisin, and oyster sauce until evenly combined. 
  • Add green onions. 
  • Add mushrooms. 
  • Cook, frequently stirring until green onions soften. 
  • Remove pan from heat and stir in sesame oil. 
  • Garnish with sesame seeds before serving.

If your pan starts to run dry or the sauce begins to burn, make sure you add 1 to 2 tablespoons of water or broth of your choice. This liquid will stop the caramelization process that is happening. 

Note: some vegetables, like zucchini and yellow squash, cook very fast. If you don’t want the vegetables to soften quickly, start by adding the onion and green/yellow/red peppers first until they are somewhat softened. Then, add the vegetables and follow the recipe timing above.

If you know you will be using garlic, onions, peppers, and green onions for the next three days, cut enough in advance. It is fantastic knowing you have those things ready.

 A cup of red wine or a little homemade kombucha will go excellent with this recipe. Let us know what you think. Stay healthy!
